Welsh Cakes

Ingredients

  • 1 ½ cups + 2 tbsp. Flour

  • 1 tsp. Baking Powder

  • ⅓ cup Sugar

  • ½ cup Powdered Sugar

  • ½ tsp. Mixed Spice (3 parts Cinnamon & Nutmeg, 2 parts Mace, 1 part Cloves, Coriander, Ginger & Allspice)

  • 7 tbsp. Unsalted Butter

  • ¼ cup Currants

  • 1 Egg

  • Milk (optional)

  • Raisins or Chocolate Chips (optional)

Directions

  1. Mix 1 ½ cups flour, baking powder, sugar, mixed spice together into mixing bowl

  2. Mix butter cubes into mixing bowl with fingers into breadcrumb-texture

  3. Mix currants, egg into mixing bowl – Mix in milk as needed until ingredients combine into dough

  4. Mix 2 tbsp. flour onto flat surface – Roll dough into ½” pieces, flatten and use cookie cutter to cut out round shapes from dough

  5. Heat pan with butter – Fry dough cakes in batches until golden

  6. Garnish cakes with powdered sugar – Let cool

  7. Serve with butter, jam as desired
