Ingredients

1 ½ cups + 2 tbsp. Flour

1 tsp. Baking Powder

⅓ cup Sugar

½ cup Powdered Sugar

½ tsp. Mixed Spice (3 parts Cinnamon & Nutmeg, 2 parts Mace, 1 part Cloves, Coriander, Ginger & Allspice)

7 tbsp. Unsalted Butter

¼ cup Currants
-
1 Egg
-
Milk (optional)
-
Raisins or Chocolate Chips (optional)
Directions

Mix 1 ½ cups flour, baking powder, sugar, mixed spice together into mixing bowl

Mix butter cubes into mixing bowl with fingers into breadcrumb-texture

Mix currants, egg into mixing bowl – Mix in milk as needed until ingredients combine into dough

Mix 2 tbsp. flour onto flat surface – Roll dough into ½” pieces, flatten and use cookie cutter to cut out round shapes from dough

Heat pan with butter – Fry dough cakes in batches until golden

Garnish cakes with powdered sugar – Let cool

Serve with butter, jam as desired
