Rhubarb Moscow Mule

Ingredients

  • 4 cups Rhubarb

  • 1 cup Sugar

  • 1 cup Water

  • 6oz. Vodka

  • 4 tsp. Rhubarb Syrup

  • 2 tbsp. Lime Juice + Wedge

  • 1 cup Ginger Beer

Directions

  1. Mix rhubarb, sugar, water together into frying pan to boil on low heat for 7-10mins

  2. Strain rhubarb syrup through sieve

  3. Mix vodka, rhubarb syrup, lime juice, ice together into cocktail shaker – shake vigorously

  4. Pour into highball glasses, garnish with ginger beer, lime wedge

  5. Rhubarb syrup can be refrigerated up to several weeks in airtight jar
