1 ½ cup Broccoli

1 ½ cup Cauliflower

¾ cup Dates

1 cup Flour

1 cup Whole Wheat Flour

1 tbsp. Baking Powder

1 tsp. Baking Soda

¼ tsp. Salt

¼ cup Butter
-
1 cup Brown Sugar

2 Eggs
-
1 cup Sweetened Grilled Coconut

¼ cup 35% Cream
-
1 ½ tsp. Vanilla Extract
Directions

Preheat oven to 350F

Mix broccoli, dates, water together into pot – Cover, bring to a boil for 5mins. until tender – Let cool at room temperature

Mix vegetables into a blender for a puree
-
Mix flour, whole wheat flour, baking powder, baking soda together into a mixing bowl
-
Mix butter, ½ cup brown sugar together into separate mixing bowl – Whisk in eggs one at time

Mix in vegetable puree into mixing bowl – Gradually mix in flour mixture

Pour mixture into cooking pan – Bake for 35-40mins

Mix cauliflower, water together into pot – Bring to boil for 2mins.

Mix cauliflower into a blender for a puree

Return cauliflower puree into warm pot – Mix in coconut, cream, ½ cup brown sugar, vanilla extract – Let simmer for 5mins

Spread cauliflower mixture on top cake – Let cool at room temperature
