Drunken Prune Armagnac
Ingredients

2 tsp. Darjeeling or Black Tea Leaves

2 cups Water

½ cup Brown Sugar

1 ¼ lbs. Prunes

1 cup Armagnac or Cognac

1 Vanilla Bean
Directions

Mix black tea leaves, boiling water together into mixing bowl, let steep for 5mins

Strain into medium saucepan, mix in brown sugar, and bring to boil over high heat for 2mins

Mix prunes and hot syrup together into mixing bowl, set aside at room temperature for 1hr

Once cooled, drain prunes, while preserving the liquid aside.

Mix Armagnac, prune liquid together into 2 mixing jars – Fill 2 mixing jars half-full with prunes, half a vanilla bean – Stir lightly

Set aside in refrigerator for 1 week to plump the prunes

Can be refrigerated up to 2 months in airtight jars
