Blueberry Balsamic Cookies

Ingredients

  • 1 2/3 cup Flour

  • 1/3 cup Freeze Dried Blueberry Powder

  • 1 tsp. Baking Soda

  • ½ tsp. Himalayan Pink Salt

  • 2/3 cup Coconut Sugar

  • 1/3 cup Coconut Syrup

  • ¼ cup Balsamic Vinegar

  • 1 Egg

Directions

  1. Preheat oven to 350F – line baking pan with parchment paper

  2. Mix flour, blueberry powder, baking soda, salt together into mixing bowl, set aside

  3. Mix coconut sugar, coconut syrup, olive oil, balsamic vinegar, egg together into mixing bowl until emulsified

  4. Mix wet and dry ingredients together into mixing bowl

  5. Create tablespoon-sized cookies with batter onto lined baking pan – bake for 12mins

  6. Garnish with melted chocolate, vanilla icing, powdered sugar, or cream cheese frosting

  7. Can be stored for up to a week in airtight container – Can be frozen up to 6 months in airtight container
