Cherry Chestnut Stuffed Turkey Roulade

3lbs. Butterflied Boneless Turkey Breast

1 ½ cup Dried Tart Cherries

½ cup Roasted Chestnuts

½ Onion

3 Garlic Cloves
-
1 cup Parsley
-
6 Sage Leaves

2 Rosemary Sprigs

2 tbsp. Olive Oil

½ cup Cabernet Red Wine

1 tbsp. Minced Rosemary & Sage

Preheat oven to 400F

Season turkey breast with salt, pepper

Mix ½ cup dried tart cherries, chestnuts, onion, garlic, parsley, sage, rosemary together into blender until finely chopped

Spread mixture on top turkey breast, leaving space around the edges

Roll turkey breast into a log-shape, securing with twine in 4 spots

Heat olive oil into skillet over medium-high heat

Add turkey breast log seam-down into skillet, cooking until golden on all sides

Transfer skillet into oven, cook for 40-45mins. – Remove and cover with tinfoil, let rest for 10mins. at room temperature

Mix 1 cup dried tart cherries, cabernet red wine, parsley, sage, salt, pepper together into pot – Cook over medium-high heat to a boil, reduce heat to a simmer for 15-20mins, stir occasionally
