Morel Bisque

4 cups Chicken Stock

1 cup Heavy Cream

⅓ cup Rice

1 Onion

2 Celery Stalks

½ cup Sherry or Brandy

1oz. Dried Morel Mushrooms

6 tbsp. Butter

Kosher Salt, White Pepper

Directions

Heat chicken stock into saucepan – Add in dried morel mushrooms for 30mins. to hydrate – Drain the mushrooms for saucepan, reserve the liquid

Mix celery, onion, 2 tbsp. butter together into skillet for 5mins. – Add rice, cook for 1min. – Add sherry/brandy until reduced by half

Add morel mixture into skillet to a simmer for 20mins. on low heat

Add morel & rice mixture into a blender, mix in cream – Puree for 1-2mins. on low speed – Gradually add 3 tbsp. butter, salt, white pepper

Heat any remaining dried morel mushrooms into butter until caramelized

Garmish with caramelized morel mushrooms, chives
